
In the winter, I enjoy having what I call “comfort foods”…great tasting, warm, heat up the house with the oven, casseroles. Unfortunately, most of the casseroles I grew up on involved many ingredients I now try to avoid: rice, white potatoes, milk, and cheese to name a few. Luckily I have found some great tasting replacements that become some of my staples this time of the year. Check one or all of them out for a great dinner. (And they make great leftovers, too!)
